Paleo Berry pancakes

Here is a recipe for Paleo pancakes that I really enjoy. When I am feeling like I need something that is not produce or meat, this is the ticket. They are so delicious! Remember that cooking with almond flour is different. It takes longer to cook and a bit more patience but well worth it!
  • 2 large eggs
  • ¼ cup of honey
  • 1 teaspoon of good vanilla
  • ¼ cup of water
  • ½ lemon zest
  • ½ lemon juice
  • 1 ½ cups of ground almond flour
  • ½ teaspoon of sea salt
  • ½ teaspoon of baking powder
  • ½ teaspoon of baking soda
  • 1 tablespoon of arrowroot powder
  • Fresh blueberries
  • 2 tablespoons of coconut oil
  1. Add the eggs through the water to the mechanical frother, (Ya know, the blender) and frothify about one minute. In a separate bowl, mix the almond flour through the arrowroot powder and whisk till light and fluffy. Slowly add the liquid mix to the dry, mixing the whole time till just blended.
  2. Heat up a large caveman sized skillet or electric griddle to medium low heat. Melt the coconut oil in it and drop heaping tablespoons of the batter onto the skillet. Drop fresh blueberries into the pancakes and cover them slightly with batter. DO NOT TURN UP THE HEAT, as tempting as it is. Almond flour burns easy. Cook slowly till bubbles start to form on the pancake or it gets too brown on the skillet side, then flip. Cook a bit longer till done and transfer to a plate. Serve up hot with agave syrup, goat yogurt and blueberries. Then go out and conquer.
